Oatmeal Cranberry Walnut Cookies

Serves 2 - 3

Ingredients

4 T. mashed banana (instead of margarine)

1/2 c. raw sugar or honey (instead of 1 c. white sugar)

1/2 c. organic applesauce (instead of oil)

egg replacer to equal one egg (instead of egg)

2 T. molasses

2 T. water

1 t. vanilla

2 c. organic rolled oats

1 c. organic whole wheat pastry flour (instead of white flour)

1/2 t. ground cinnamon

1/2 t. sea salt (instead of table salt)

1/2 t. baking powder

1 c. cranberries (soaked dried cranberries may work)

1/2 c. diced walnuts

Directions

1. In a bowl, cream banana and sugar. Beat in apple sauce, egg replacer, molasses, water, and vanilla.

2. In a separate bowl, mix together dry ingredients, except for cranberries and walnuts.

3. Fold dry ingredients into wet ingredients. Fold in cranberries and walnuts. Cover and chill dough 30 min.

4. Bake on cookie sheet lined with parchment paper (instead of oil) and bake at 375' F till light brown - approximately 20 minutes. Yields about 12 large cookies.
