Ingredients

1 C cooked garbanzos

- although we use soaked garbanzos when we are eating raw. If you go raw, make sure you soak the beans for 24 hours in water (first rinse them and then cover with enough extra water so that the beans can soak it in.)

½ C tahini

- this is sesame seed paste - you will find it in health food stores or in the middle eastern or world food section of your store

2 to 3 cloves of garlic

¼ C of water

¼ C of freshly squeezed lemon juice

¾ tsp. Cumin

¾ tsp. Salt - preferably sea salt

Directions

We put the beans, especially if just soaked, into the food processor with the water, lemon juice and garlic and process until smooth. Then we put it in a bowl and add the tahini, cumin and salt and mix by hand. If you have a big enough food processor, just put all these in with the bean paste and process until mixed. We usually make a double recipe for parties, and sometimes just for us when we get a real craving.
